The “spring forward” time change to Daylight Saving Time each year is one of our favorite days of the year. In fact, it just may be Veronica’s very favorite. David, on the other hand, leans toward Thanksgiving as his.

Before we go on, I must admit that I’m pretty sure I usually say “daylight savings time,” with an s. Turns out that is incorrect, I checked. You see, the word saving refers to the word daylight so it should be singular. We are not savings daylight.

I also found out that the phrase does not need to be capitalized (obviously after I wrote it up above, and no, I’m not going to fix it. I like the way it looks.) Additionally, there is some debate as to whether it should be hyphenated. I saw some good points made as to why it should, but once again, I’m leaving it as is.

Anyway, this year we decided to celebrate moving our clocks ahead by one hour, and thereby making a day of only 23 hours, in a style befitting such a grand stretch of the time – space continuum.

That number seemed significant, and so we made a getaway to San Diego’s only luxury, lifestyle hotel on the beach, Tower23. And when we say on the beach, we really mean on the beach. As in, walk out the door and the beach is right there.

Too many times we have booked a “beach” vacation only to find out that we were staying near the beach, but not on the beach.

Did we forget to mention the free beach chairs and umbrellas, along with free WiFi on the beach? It works great too!

That meant having to carry a bunch of stuff a few blocks, or even more sometimes, and across busy waterfront streets. Sometimes it even meant driving a for a while, and then the real nightmare begins … trying to find a place to park that is even remotely close to the seaside.

Another problem with those not quite on the beach accommodations is that if one person is ready to go, then everyone has to go too. “The cars leaving guys!”

Well, we eliminated all of those problems in one swoop by staying right where the sand meets the sea. Tower23 has complimentary valet parking included with the room, and easy access to a rockin’ yet relaxing stretch of Pacific Beach just a few steps from any room.

Over three miles of boardwalk stretches out in either direction, and we love riding bikes, so since we didn’t bring our own, we figured we could rent some. No need. Bikes are also included with the room, so we saddled up and pedaled down the boardwalk for a leisurely ride.

The inland side of the boardwalk is lined with restaurants, pubs, coffee bars, and some souvenir shops, but the ocean side is wide open. This makes for a wonderful uncluttered views of the sea and all of the activity taking place on the beach and in the water.

It also offered us a perfect view of a certain lifeguard tower that gave the name to our new favorite hotel in San Diego, tower number 23.

Since Pacific Beach is known as one of the area’s best surfing spots, much of the in-water activity involved the delicate balancing act of riding a board atop crashing waves. Looks like fun, but we’ve tried it and have been extremely unsuccessful at ever achieving a standing position. This made us perfectly content, as well as amazed, to be watch others who know what they are doing glide effortlessly across the waves.

After riding nearly the entire 3 miles of boardwalk and back, we figured that we had earned a treat and hit the balcony overlooking the Pacific for a quick drink. Then we headed down to JRDN, the onsite restaurant where chef Stephen Gage prepares oceanfront inspired meals right on the boardwalk.

We began with the Chopped Salad, that has a distinctly Italian flare, and TUNA, TUNA, TUNA Sushi roll, featuring ahi, albacore, and spicy tuna, along with cucumber, yamagobo, shiso, and negi. The fresh fish paired practically perfectly with the fresh sea air.

I continued with my Italian theme and had the Lobster Risotto, while Veronica stayed by the sea and had the SO CAL Clam Chowder.

The risotto had a whole lobster tail parked in the center of the bowl, so I pretty much had to love it. Meanwhile, the chowder was unique as clam chowders go, in that it isn’t anything like the typical potatoes, shellfish, and heavy cream broth. This is more of a stew, thick with tomato, and has a decidedly Mexican flair with guajillo chili, cilantro, and lime.

We could give more of a detailed review I suppose, but let’s just say that not a drop of either dish was left in the bottom of the bowl. That pretty much says it all.

Yet, we still managed to squeeze in a little dessert. Well, we shared one, and everybody knows, that’s like not having any at all, right? Not this time.

The Chocolate Croissant Bread Pudding certainly deserves more recognition than that. In fact, in a meal where everything was absolutely fabulous, this may have been the star of the show. All that chocolate, topped with honey buttermilk ice cream and chocolate sauce, made for an exceptional end to an exceptional day.

Wait, did we also forget to mention the crazy huge Jacuzzi tub with a waterfall from the ceiling?

And yes, it was dark by the end of it, even with daylight saving time. (See, no capitalization…I can do it.)

The next morning, we lounged in late and enjoyed a room service breakfast on our own private lanai.

Pretty fancy, huh? Man, we could get used to this.

The menu features some intriguing choices, we tried the Steak & Eggs Rancheros and the Avocado Toast. Now these may not sound all that unique but let me assure you, this was not your typical steak and eggs.

The JRDN version comes with black beans, guacamole, lime crema, queso fresco, pico de gallo, and three short rib with mashed potato rolled tacos. Olé! The avocado toast, while a little more traditional, was still spiced up with some garlic chili oil and dukkah.

They both had us ready for an hour longer day of sight-seeing around beautiful San Diego. But that’s another story for another time. I promise, we will get to it here very soon.

For now, let’s just say that we were back in time to enjoy a spectacular sunset from the end of Crystal Pier.

An hour later than it was a the day before.

Get Your Finances in Order

It’s a good idea to take a look at your finances, including where you are in retirement savings, because your kids will probably need some help from you even once they are out on their own. Be Proud

Maybe the empty nest doesn’t feel great, but this is a time to be proud of what you have accomplished. You have raised your child to adulthood, and they have gone out into the world equipped with everything that you have taught them. A phase of your life is over, but a new one is beginning, and of course your child will still be a part of it even if it’s in a different way now.

About ten years ago, when we first traveled to Spain, we were certainly excited and absolutely fell in love with Barcelona, but we didn’t really think of Spain as a food destination. Now, after several more visits back to Barcelona, and all around the country, we sure do realize how wrong we were.

Spanish cuisine is every bit as delectable as its European counterparts in France or Italy, even if perhaps a little less famous. Well, we are here to say we don’t think that is right, so we are going to try to bring a little bit more notoriety to fabulous Spanish food.

The first thing we tried, and went completely crazy for, was Tapas. The whole idea of small bites in the afternoon could not be more up our alley. Even better, one of the primary components of any good tapas spread just happens to be one of our favorite foods, olives.

Olives and Spain go back a long time, over two thousand years in fact, to when the Phoenicians brought them to Iberia from Asia Minor. Later, Spanish explorers were instrumental in bringing olives to the New World way back in the sixteen-hundreds. Before long they were growing all through the Americas as well.

Since that time Spanish growers have become the world’s leading producer of olives and by far the number one supplier of olive oil. Believe it or not, they grow nearly five times as many olives as second place Italy.

With that nugget of info in mind, it makes perfect sense that olives are a staple of Spanish food. But we can’t very well just say olives, because there are over two hundred varieties grown in Spain alone. So we made a point of trying as many different kinds as we could.

Obviously, this goes way beyond just choosing between green and black. There are Hojiblanca, Gordal and Manzanilla, just to name a few, so we thought it would be a good idea to check out Spanish olive brands and learn from the experts.

But we didn’t need an expert opinion to know that we loved every olive we put in our mouths while galivanting across the Iberian Peninsula. Tapas almost always begin with a dish of delectable olives, followed by precisely prepared bites of seafood, cured meats, veggies, and sometimes baked cheese, so we had plenty of opportunities to try new varieties.

On one of our afternoon respites, we were served delectable little bites of an olive and pepper medley on toast that was reminiscent of an Italian bruschetta. For us, that was about as good as it gets.

At just about every tapas bar we visited in Spain, when we ordered a drink it came with a complimentary dish of olives. The type generally depended on where we were. Sometimes just simple brined olives, either green, black, or often something in between.

Other times cracked olives, usually spiced with herbs and garlic would appear, and just as quickly disappear. Or stuffed olives, with anchovies, or slivers of almond, or the classic pimiento would make an appearance.

We also learned that no matter how they are served, there is an added bonus in that these tasty olive treats are not just good, they are good for you. They are packed with vitamins A and E, as well as a great source of fiber and are chock-full of minerals.

Olives are also a great source of good fats, like oleic acid, an omega-9 fatty acid that is one of the main reasons why olives are so healthy. Yup, eating olives can help reduce the risk of diabetes, heart disease, and even some types of cancer, along with helping control blood pressure and levels of bad cholesterol.

Wow! We knew we loved them, but we sure didn’t know about so many of the benefits of eating olives.

Of course, tapas are not the only time that olives show up in Spanish cuisine. Olives cook and blend wonderfully with tomato, seafood, and rice so they have been known to show up from time to time in the most classic of Spanish dishes, paella. Or chicken with olives is another favorite rustic meal.

With all of our traveling, and trying olives in every imaginable way, we did learn quite a few things, but no lesson was more important than this one final bit of advice.

We can say without the slightest hesitation, and with first-hand experience, never, ever eat an olive right off the tree. Wow! It is the most bitter thing I have ever put in my mouth. It actually brought tears to my eyes.

Lesson learned. So from now on we will be more than happy to wait until the proper brining process produces the delectable morsels that every tapas table should have plenty of… Spanish olives!

Skunk Ape Research Headquarters

Part of the beauty of being a GypsyNester is the opportunity to explore the unknown.

We took that up a notch when we drove deep into the Everglades on the Tamiami Trail (the section of U.S. Highway 41 named as a clever contraction of Tampa & Miami) and came upon the Skunk Ape Research Headquarters.

This was not the kind of place that we could possibly drive on by, we had to go inside and investigate.

What we discovered was the ultimate source for all things Skunk Ape, the Florida cousin in the Bigfoot/ Sasquatch/
Yeti family.

After viewing the photos, news articles and plaster casts of footprints we were hungry for more information so we asked to see the proprietor and renown Skunk Ape expert and author of The Everglades Skunk Ape Research Field Guide, David Shealy.

Mr. Shealy was happy to fill us in on the history and habits of the elusive hominids, both through his personal experiences and documentation he has received through others.

He really captured our interest when he relayed his tips for spotting one. We had to try!

The best news was that the headquarters also serves as the office for a campground, so we forked over the fee to stay a few days. We were determined to get an up close and personal, real live Skunk Ape encounter for ourselves.

The first step was to purchase an Everglades Skunk Ape Research Field Guide (all proceeds benefit Skunk Ape research) which contains a cornucopia of information on these rare creatures.

We poured over the guide, taking extensive notes. We didn’t want to head out deep into the Everglades unprepared.

In the guide we learned that Skunk Apes are omnivores, with the ability to climb and make beds out of leafy branches, there are an estimated 7 – 9 of them in the Everglades, they like alligator caves, smell like rotten eggs, and they love lima beans. Skunk Apes lead a nomadic, hunter/gatherer existence, have a good memory and exceptional hearing.

But the main purpose of the field guide is to assist in, and facilitate the sighting of Skunk Apes. It recommends that preparations should be made before heading out into the glades on a search.

Florida Everglades, Skunk Ape Territory

We were not particularly interested in making any plaster casts of footprints, so we omitted the bucket and bag and chose to bring a camera instead.

We were pretty amped up on the prospect of getting the world’s first clear, in focus photographs of a bigfoot type creature. With our zoom lens.

Mr. Shealy had explained to us how Skunk Apes can be spotted by leaving out bait to attract them, even telling us where he had left some recently, but the guide book went into further detail.

Baits include: whole kernel corn, rice, dog food, deer liver (which “Should be kept frozen until your site is chosen.” and “Should only be used immediately following an actual sighting.”) but “Unmistakably the best baits available are dry beans.

Black eyed peas, pinto and kidney beans all work well, however large lima beans are the recommended bait and should be considered your first choice.”

Hunting for Skunk Ape in the Everglades

Wet beans are “proven to be more effective” because “the beans sour, giving off an odor which is appealing to Skunk Apes,” but go bad after a few days. Never use bacon or pork as that will attract buzzards.

The manual goes on to advise that in order to protect the apes: “If your attempts at baiting are successful, wait at least five days before telling anyone.

This will allow enough time for the Skunk Ape to leave the area.” Because, “Unfortunately, there are people who would like nothing better than to shoot one of these magnificent creatures.”

The Field Guide also advises that “The use of tranquilizer guns is not recommended and is subject to regulations.” and “Leg traps are strictly forbidden.” Also, “Any evidence collected should be considered valuable and reported to the local authorities, immediately.”

Armed with this information, and one last extremely valuable piece of advice, “Never enter an alligator cave in search of Skunk Apes,” we felt like we were ready to embark on our quest.

It was dry season so we headed into the tall grass that is usually swamp. At this time of year it was soggy, but definitely passable.

Our first stop was the bait that Shealy had left out for the apes.

When we came upon the pile of beans we didn’t see any signs of Skunk Ape activity.

We did find paw prints, large paw prints, and followed them to the bones of a fairly large animal that looked to have been devoured.

We could only guess that a Florida Panther had been around. We were in no mood to fend off any hungry predators so our survival instinct told us to move on.

Next we set out across several hundred yards of mushy grassland to one of the ladder stands that the headquarters has erected.

Climbing up to the platform allowed us a much better view of the surrounding area. We scanned the horizon with our binoculars, but once again we saw no sign of a Skunk Ape.

We were treated to one of the most spectacular sunsets we’d ever seen, so we felt our first evening’s efforts were not in vain.

The next day we discussed other possible sighting sites and strategies with Mr. Shealy and he pointed us to an area across the highway a mile or two into the glades.

Since the trip would cover several miles total we decided to head out on our bicycles, at least as far as we could. After a few miles the trail became too muddy for our bikes and we continued on foot.

Hunting for Skunk Ape in the Florida Everglades

We wandered deep into the Everglades, miles from any signs of civilization, and found some matted grass amongst the underbrush in a few places.

But not being experts, we were unable to ascertain whether these were Skunk Ape bedding sites or the resting place of some other animal.

After a full day of investigation our water supply was running low and we had many miles to go to get back to The Skunk Ape Research Headquarters and our base camp.

Tails tucked between our legs, we hiked and biked our way back through the mushy and magnificent scenery. A beautiful walk in the wilderness.

We had been skunked in our efforts to sight a Skunk Ape… this time.
