Liquid Olives, Weird Regional Food

One of the weirdest foods ever. Fancy schmancy Bazaar by José Andrés in Beverly Hills serves up these squishy, yet oddly tasty numbers. These “olives” are achieved by mixing olive juice and sodium gluconate (?!) and then squirted into water with a syringe.

The taste was wonderful, but the texture – ever so weird. They have a gummy-bear-type outer layer and, when that pops, the liquid inside comes bursting out.
