Tapado is the Garifuna´s signature dish (we had ours in Livingston, Guatelmala), a seafood soup with an entire fish, shrimp and whatever shellfish was caught lately, soft-shell crab on our particular day, with plantain and/or green bananas in a coconut milk broth spiced with cilantro and a hint of hot peppers.
